It would be wrong to call this a chowder, it’s much lighter, but it is a creamy fish soup.  Made with Celeriac, Cider & Fish Stock with locally caught fish and shellfish (changes daily) and a sprinkling of milled kombu gathered from the shores around us, this is an elegant Irish dish.

These are grown by John Thornton in Rosymailley, only a few hundred yards from the restaurant. We love the flavour….not too sweet and not too salty. This is not an accident; it is achieved by nestling them on the sea bed where two rivers wash nutrient rich spring water down from the surrounding land & mountains to mix with the waters of Clew Bay.

These mussels grow on the shores between Westport and Newport. They are hand- picked by Padraig Gannon for the restaurant.  Wild mussels have to work for a living. They open and close as the tides wash over them and as a result the meats are robust and full of flavour. A true product of Mayo.

This pork is from Brickens, Co. Mayo. It is reared by Dave Milestone who has worked for years to develop a breed with a perfect fat to meat ratio, and more importantly, great flavour. We are taking our influence for this dish from the great Ramen Broths using the bones and local seaweed. It is delicately flavoured with Star Anise, Rosemary & Kombu. Baby Turnips, Peas & Carrots bring this home.

This is often called Jacob’s Ladder cut.  Dexter is an indigenous Irish Breed which has gained popularity in the last few years, not least for its flavour.  We slow cook ours for a long time until it’s coming off the bone.  The cooking juices go to make up a great Beef Bone Gravy.  The trimmings make up a delicious miniature Cottage Pie with piped Duchesse Potato on top. Pickled Balla Mushrooms, Watercress and Wild Garlic Oil finish the dish.

We are being a bit tongue in cheek here with our ‘Ode’, but we feel the humble carrot deserves to be highlighted. We love Gabriel O’Flaherty’s Goat’s Cheese from the Aran Islands and it pairs so well with the sweet carrots.

Local lamb from Westport is slow cooked for many hours.  The sweet lamb pairs wonderfully with the taste of the sea.  We use the bones to make a rich gravy for the lamb and steam the clams open in butter, garlic and wine. (Irish Times Best Main Course 2016)
